Make Baked Mexican Trio at Home: Easy Mexican Recipe (Mexican Bake Dish)

It’s said that we should have more and more colors in our meal. Baked Mexican Trio is one of those colorful dishes. It not only looks beautiful but it tastes also delicious.

Here in this homemade bake dish, I made 3 layers. 1 st is green and it is prepared from spinach, 2 nd is white that is basic white sauce pasta, and the last means 3 rd is red and it is made from tomato puree and beans.

This means lots of colors, lots of tastes, and lots of healthy ingredients in one dish. In my opinion, it may be a perfect single meal dinner if served with garlic bread or simple toasted bread. A must-try recipe at home. Enjoy cooking.

  • Cooking time – 20 to 25 minutes
  • Baking time – 10 to 15 minutes
  • Makes 6 small serving bowls

Ingredients to make Baked Mexican Trio:

For the green layer:

  • 1 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 1 small onion paste
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 tablespoon green chili paste
  • 1 small tomato pure
  • 1/2 cup blanched palak-spinach pure
  • Salt to taste
  • 1 teaspoon kasuri methi-dry fenugreek leaves
  • 1 tablespoon fresh cream
  • 1/2 cup paneer
  • 1/4 cup boiled elbow macaroni (opt.)
  • A pinch turmeric powder

For the white layer:

  • 2 tablespoon butter
  • 2 tablespoon refined flour
  • 1 1/2 cup milk
  • 1 cup boiled macaroni
  • Salt to taste
  • 1 teaspoon black pepper powder
  • 1 teaspoon oregano
  • 1 cube grated cheese

For the red layer:

  • 1 tablespoon oil
  • 1/4 teaspoon ajwain
  • 1/4 teaspoon crushed garlic
  • 1 small onion finely chopped
  • 1 small tomato puree
  • 1/2 cup baked beans
  • 1/4 cup boiled kidney beans
  • 1/4 cup boiled soya bean
  • 1/2 cup paneer cubes
  • 1/4 cup boiled sweet corn
  • Salt to taste
  • 1 tablespoon red chili powder
  • 1/2 teaspoon chili flacks
  • 1/2 teaspoon mix herbs
  • 1/2 teaspoon oregano
  • 2 tablespoon tomato ketchup

To cover with:

1/2 cup process cheese
1/2 cup pizza cheese
Chili flacks and oregano to sprinkle (opt.)

Method to make Baked Mexican Trio:

For the green layer:

  • Heat oil and add cumin seeds to it. When it crackles add ginger and garlic paste. Saute for 1 minute and then add onion paste to it. Again saute for 2 minutes. Now add tomato pure and cook for 2 minutes. Finally, it’s time to add spinach pure to it (I always add green chili while churning spinach.) Cook well.
  • Add salt, kasuri methi. turmeric powder and fresh cream to it. Cook well.
  • Add paneer and boiled macaroni to it. Mix well. Keep aside.

For the white layer:

  • Heat butter and roast refined flour to it. Add milk and mix properly.
  • Add salt and black pepper to it. At last, add boiled macaroni and oregano to it.
  • Mix well and keep aside.

For the red layer:

  • Soak kidney beans and soya beans in hot water for 5 to 6 hours. Pressure cook for 3 whistles or until cook properly. Add salt while cooking.
  • In a pan heat oil and add ajwain to it. Add the onion-garlic paste to it. Cook for 2 minutes and then add tomato puree to it.
  • Again cook. Now add baked beans with sauce, kidney beans and soya beans to it. Cook for 2 minutes. And now it’s time to add paneer, bell pepper, sweet corn, and all dry spices. Mix well and cook for 2 minutes, at last, add tomato ketchup and mix well.

How to assemble:

  • In a serving bowl first, make green layer, then white and at the top red layer.
  • Cover with grated cheese. And sprinkle some chili flacks and oregano if required.
  • Repeat for all 6 bowls.
  • Bake for 10 to 15 minutes or until cheese melts at 250`c temperature in the preheated oven.
  • Serve hot Baked Mexican Trio directly from the oven.

  • For spinach pure wash and cut spinach and then cook for 2 to 3 minutes in boiling water. Immediately remove from hot water and soak in tapped water for 2 minutes. Add a few drops of oil and pinch salt to boiling water before adding spinach. Add green chili to spinach and then churn to make pure.
  • For making creamy paneer at home boil milk and then add 1 to 1 1/2 teaspoon lemon juice to it. When curdling strain and hang for 30 minutes. Always use diluted lemon juice means to add some water to lemon juice.
  • For boiling macaroni boil water and add salt and oil to it. Add macaroni to boiling water and boil until cook. When ready remove from hot water and soak in tapped water until want to use. Because of this, you will not need to add oil.
