What is a Pressure Cooker?

Basically, Pressure Cooking is the process of cooking food item at high pressure.

Cooking food employing water or water based cooking liquid in a sealed vessel is called pressure-cooking.

Pressure-cooking means high pressure limits boiling, it permits cooking temperature to reach above 100°C.

Pressure Cooker is invented the physicist Denis Paplin. It works by expelling air from the vessel, and trapping the steam produced from the boiling liquid inside.

It is compulsory to release the steam, so that the vessel can be opened safely. Most food can be cooked in pressure cooker in steam or water based liquid.

In 1679, French physicist Denis Papin, invented the steam digester in an attempt to reduce the cooking time of food.

His airtight cooker used steam pressure to raise the water boiling point; as a result, it cooks food more quickly.

Georg Gutbrod of Stuttgart began manufacturing pressure cookers made of tinned cast iron in 1864.

Spain granted a patent for the pressure cooker to José Alix Martínez from Zaragoza in 1918. In 1924, José Alix published a recipe book of 360 recipes for cooking with a pressure cooker.

Earlier (first generation), they used to operate pressure cooker with the weight-modifies or ‘jiggler’ valve.

This releases the pressure during cooking/operation. The valve rattles as excess steam is released.

Never try it. Do not try to open lid forcefully when cooker is pressurized. It may burn your skin.

Always wait to release pressure. In case of hurry keep it under tap water and let cool before opening.
