Meet Dough & Joe,  not just another pizzeria around the corner; but as the founders call a “Piazza & Beanery”—a bespoke space that marries the soul of an Italian food with the artisanal precision of a new-age coffee house.

What sparked the idea for Dough & Joe, and how did it evolve into Bandra’s Piazza & Beanery?

Priyanka Kotak: Food has always been central to our lives, but the spark for Dough & Joe came from the joy of watching our son, Vansh’s savour simple, well-made delicious food made with care and honesty.

But it wasn’t just a restaurant we wanted to open, but a space that is like a second home – a neighbourhood shell where people could amble in with ease, share a meal, and feel belonged.

It had to be a neighbourhood piazza for community and warmth. That’s how we imagined and created Dough & Joe became Bandra’s Piazza & Beanery: Bandra’s very own artisanal food-forward, coffee-led space, designed for conversations and more.

What were the challenges of creating a niche space like Dough & Joe in a competitive F&B market like Bandra?

Priyanka Kotak: While it is true that Mumbai’s F&B market has always been about speed and scale, our speciality was doing exactly the opposite.  And the first step was to eschew the “fit the market” practice for something that looked and felt personal.

Achieving that with commercial success was of course the big challenge. But our focus was on patience and restraint.

Those core values helped us shun the conventional practices for a “fit for the brand” ethos: Be it how we hire our staff, orchestrate the ambience or even how we source the ingredients for our F&B offerings.

Building responsibly was a conscious decision that we took when we started conceptualising Dough & Joe, and it has been our “secret” to creating a niche space effectively.

Dough & Joe is famous for its artisanal pizzas, what is the “secret sauce” that makes them different from the offerings in the market?

Priyanka Kotak: While pizza-making has evolved over the years, what sets Dough & Joe apart is restraint. Our artisanal pizzas are an exercise in patience and minimalism—built on slow-fermented dough that acts as a quiet canvas for high quality ingredients.

We believe in the philosophy that “less is more”. None of our pizzas are overloaded; each is thoughtfully composed to let flavours speak for themselves.

Our signature Thecha Prawns and Bombay Kheema pizzas are prime incidents where European technique meets Indian flavour, seamlessly and without excess.

Conscious sourcing is central to our craft. From the quality of our flour and farm-fresh produce to our cheeses, specialty coffee beans, and flavourings, every choice reflects our commitment to purity, provenance, and balance.

Dough & Joe blends Italian vibes with a beanery focus; how do you curate menus that appeal to Bandra’s diverse crowd?

Priyanka Kotak: Dough & Joe identity is its “eclectic comfort.” The brand has mastered a difficult balancing act: staying rooted in Italian tradition while speaking the local language of Bandra’s diverse palate.

 Here, the menu unfolds as a journey of reimagined familiarity—where flavours rooted in nostalgia are revisited with modern sensibility. Classic comfort favourites are given thoughtful twists, allowing the familiar to feel fresh yet soulful.

Food and coffee share equal billing here. Alongside the menu, the café offers playful, visually striking beverages such as the Butterfly Lychee Matcha, designed to appeal to a new generation of diners while remaining grounded in quality.

And the signature offerings come with a D&J twist like the Papa’s Chicken Pepperoni Pizza, Butter Garlic Prawns, and the Thecha Paneer Panuozzo – each reflecting the brand’s approach of balancing technique, flavour, and restraint.

As co-founder, how do you build and retain a passionate team in the high-turnover hospitality industry?

Priyanka Kotak: At Dough & Joe, culture takes precedence over process. The team is built on attitude and intent—skills can be taught, but genuine care cannot. By involving every member in the story of the brand, the sense of ownership can be infused.

Respect, consistency, and opportunities for growth are core to Dough & Joe’s workplace culture.

What’s next for Dough & Joe and Bandra’s Piazza & Beanery—new locations, menu expansions, or collaborations?

Priyanka Kotak: Scaling a brand requires more than just good food; it requires a refusal to dilute the vision. For us, the challenge in expanding isn’t just commercial— but temporal.

So while we definitely see Dough & Joe traveling to new cities, the expansion strategy remains “stubbornly personal.” The goal is not to become a cookie-cutter chain, but create a scalable community brand

We’re exploring new cities, potential collaborations, and menu extensions, but the focus will be on all-day comfort food and explorations into specialty coffee, ensuring that even as the footprint grows, the feeling of “belonging” remains intact.

Any advice for aspiring F&B entrepreneurs in India, especially women founders?

Priyanka Kotak: Be patient, be stubborn about your vision, and don’t wait for permission. The F&B industry will test you daily, but if your intent is thought through, it will be seen & felt.

For women founders especially: trust your instincts not the trend. Build what feels true to you, to your vision, and the rest will fall in place.
