As we are using lots of healthy vegetables in our soup like bottle gourd, spinach, carrot, beetroot, tomato etc.
It can be said that consuming a glass of this vegetable soup in the morning may power house for our body for whole day.
All vegetables are good for health, mainly lowers blood pressure level, blood sugar, good for heart and eyes also.
When bottle gourd is good as low fat food, at the same time carrot is good for eyes and weight loss.
The most positive thing about this recipe is you can add or omit any vegetable as per your choice or availability.

- Soaking time 2 to 3 hours
- Preparation time – 5 to 7 minutes
- Cooking time – 8 to 10 minutes
- Makes 2 glasses of 250 ml. approx.
Ingredients to make Healthy Vegetable Soup:
- 1/4 cup chopped bottle groud
- 1/4 cup chopped spinach
- 1/8 cup chopped beetroot
- 1 tomato chopped
- 2 tablespoon moong beans
- (soak in warm water.)
- Can be soaked in normal water if you want to soak overnight.)
- 1/4 cup chopped carrot
- 2 to 3 tablespoon chopped french beans
- 1 tablespoon ginger paste
- Salt to taste
- 1 teaspoon black pepper powder
- Juice of one lemon
Method to make Healthy Vegetable Soup:
- Add all the ingredients excluding salt, pepper powder and lemon juice to a pressure cooker, add 2 cups of water and pressure cook for 3 to 4 whistles.
- Let it cool and then churn and strain. Adjust consistency by adding water.
- Add salt, pepper powder, and lemon juice. Mix and serve warm Healthy Vegetable Soup.
