While our family legacy laid the foundation, my international training in chocolate science and craftsmanship awakened a new vision to create premium chocolates that blend European techniques with Indian soul, offering a unique luxury experience that feels warm and personal.

What challenges do you face producing high-end chocolate in Kerala’s demanding conditions, and how do you overcome them to create extraordinary products?

Jacob Joy: Producing premium chocolate in Kerala’s challenging climate involves navigating high heat and humidity, which can impact tempering, texture, and shelf life.

To overcome these hurdles, we implement strict climate control throughout production and storage, tailor our recipes to suit local conditions, and invest in advanced, specialized equipment.

Rigorous quality monitoring and sourcing the finest ingredients ensure that every batch maintains the luxurious taste and consistency our brand is known for, even in Kerala’s demanding environment.

Can you share how you develop nuanced recipes, like balancing spices in ganache, and the role of R&D and product testing in standing out?
