Recipe of Mango Pudding – Make delicious Dessert with eggless vanilla sponge cake at home

Mangos are the king of the fruits. Now it’s time to end the Mango season. So here I am with the end of the season recipe of mango pudding.

Actually this an easy recipe, as I am going to use my own homemade eggless sponge cake in this recipe.

And the best thing about this cake is, we will make it in the microwave in just two minutes.

No artificial setting agent is required. Only delicious vanilla sponge and super-rich mango. So let’s enjoy cooking this dessert. I hope you will enjoy my Recipe of Mango Pudding.

Preparation time – 15 to 17 minutes
Cooking time – nil
Baking time – 2 minutes
Makes one medium size jar pudding of approx. 350 ml
Cooling time – 1 to 1 1/2 hours

Ingredients to make Easy Mango Pudding:

For vanilla sponge cake:

1/2 cup refined flour
1/2 teaspoon baking powder
1/4 teaspoon soda bicarb
2 tablespoon whisked curd
1/4 cup butter
1/2 cup powder sugar
1/4 teaspoon vanilla essence
Odourless oil or butter for greasing

For mango layer:

  • 1 cup thick mango pulp
  • 1 cup vanilla or mango ice cream
  • 1 1/2 cup chopped mango
  • Finely chopped or sliced almonds, cashew and pistachio

Method to make Mango Pudding:

For vanilla sponge cake:

  • Sift refined flour, baking soda, and soda bicarb. Keep aside.
  • In other bowl mix curd, vanilla essence, butter, sugar, and 1/8 cup warm water. Mix well.
  • Mix both dry and wet ingredients in the same bowl and mix well.
  • Pour it in greased and dusted microwave-safe bowl and tap it.
  • Cook in the microwave for 2 minutes. Check and remove it from the microwave. Let it cool properly.

For mango layer:

  • In a mixing bowl mix strained mango pulp and ice cream. Whisk properly. Keep in the refrigerator to cool again.

How to assemble:

  • When the cake is cool crumble it and divide it into two parts.
  • Place a part of vanilla sponge cake at the bottom of the jar. Try to make a uniform layer. Now make a layer of mango cream over it and cover with half of the chopped mangoes and chopped nuts with Tupperware Smart Chopper.
  • Again make the cake layer, then mango cream and chopped mangoes.
  • Garnish with nuts and refrigerate for a minimum of 1 hour.
  • Serve chilled and delicious Mango Pudding.
