What motivated you to start Monarch Liberty Hospitality?
Sumit Govind Sharma: I started Monarch Liberty Hospitality with a simple and powerful belief, that the restaurants should evoke an emotional connection, not just serve food to the customers. Growing up, I was fascinated by spaces that made people feel something: comfort, nostalgia, excitement.
Over the years, I realised there was a clear gap in the market for dining experiences that combine thoughtful design, real emotion, and a strong sense of place. That’s what inspired me to start Monarch Liberty Hospitality.
I created MLH to bridge that gap and my mission was to build hospitality spaces that feel familiar yet elevated, where guests return not just for a dish or a drink, but for the way the place makes them feel from within.
What unique qualities or services set Monarch Liberty Hospitality apart in a competitive market?
Sumit Govind Sharma: At MLH, Me and my full team focus heavily on experience-led hospitality. This means:
Emotion-first design: Our spaces are crafted to tell a story and evoke a feeling the moment you walk in.
Hyper-local relevance: We build concepts rooted in the neighborhoods we serve, so each brand feels naturally connected to the community.
Strong operational discipline: Behind every experience is a robust structure driven by efficiency, consistency, and people-first management.
Adaptive brand thinking: We don’t replicate templates, each MLH brand, whether it’s EVE, Que Sera Sera or TAT, has its own identity, personality, and reason to exist.
How has technology transformed the hospitality business, and how is Monarch Liberty leveraging it?
Sumit Govind Sharma: I believe technology has pushed the industry toward personalisation, efficiency, and transparency. At MLH, we’re using it in very practical yet meaningful ways:
We use data-led menu engineering to understand what our guests love and optimize our offerings.
We use integrated POS and CRM systems that allow us to personalise each guest’s experience and strengthen repeat engagement.
We also rely on smart operational tech—like inventory tools, staff scheduling systems, and real-time performance dashboards—to ensure better cost management and consistent quality. While technology enhances our backend, the goal is always to free up our teams so they can deliver warmer, more human-centred hospitality upfront.
How is Monarch Liberty incorporating sustainability into its operations and offerings?
Sumit Govind Sharma: At an operational level, we follow responsible waste-management practices across our kitchens.
The staff at the kitchen collects the used cooking oil and sends it for bio-fuel production, the restaurant’s wet waste is processed into organic compost (khad), which allows us to significantly reduce landfill dependency while contributing back to the ecosystem in a meaningful way.
We’re also conscious about the materials we use, we always opt for glass bottles over single-use plastic wherever we can. These are small, consistent choices, but together they help us operate more responsibly without taking away from the dining experience.
What has been the biggest challenge you’ve overcome as an entrepreneur in hospitality?
Sumit Govind Sharma:The biggest challenge I have come across is building teams that deeply understand MLH’s philosophy. Skills can always be taught and refined, but what truly matters is the attitude and mindset a person brings. With the right foundation, we can train anyone to excel.
However, getting people to align with an emotion-first approach to hospitality takes time. As we’ve grown, balancing rapid expansion with preserving our culture and emotional ethos has been a real learning curve for me.
One of the biggest challenges I have seen is, keeping pace with the expectations of today’s well-travelled Indian consumers.
The guests coming into our restaurants are exposed to global cuisines, service standards, and design sensibilities, which naturally raises the bar. The challenge is to consistently deliver experiences that feel thoughtful, refined, and relevant – while staying true to our brand’s local identity and core philosophy.
What advice do you have for aspiring entrepreneurs looking to enter the hospitality sector?
Sumit Govind Sharma: My advice to all the aspiring entrepreneurs that are looking to enter the hospitality sector is that it is very important to start with a clear purpose, not just a good-looking idea.
I also encourage entrepreneurs to spend real time on the floor, that’s where you will truly understand what your guests want and what your team needs .
I absolutely suggest that aspiring entrepreneurs stay open to change as this industry moves quickly. I always tell aspiring entrepreneurs to really take care of their people, because they’re the ones who shape the guest experience every single day, and this in turn can make and break your brand i.e enhance or diminish your brand’s reputation.
And above all, remember that hospitality is about making people feel good. If you can do that well and consistently, everything else naturally falls into place.
