But unfortunately, I didn’t have lasagna sheets at that time. So I tried to use bread instead of lasagna sheets, and the result was awesome.
So I thought to share my experience of that super delicious recipe with you. That’s the story of my Veggie Lasagna.
In this homemade recipe, I used lots of beans and vegetables to make it healthier. It may be a complete meal with a bowl of hot soup.

Soaking time – 5 to 6 hours
Preparation time – 10 to 15 minutes
Cooking time – 20 to 25 minutes
Baking time – 10 to 12 minutes
Serves – 4 person
Ingredients to make Veggie Lasagna:
1 tablespoon oil
1/2 teaspoon ajwain
1/2 teaspoon crushed garlic
1 onion finely chopped
1 tomato puree
1/2 cup baked beans
1/4 cup boiled kidney beans
1/2 cup boiled soya bean
1/2 cup paneer cubes
1/4 capsicum finely chopped
1/4 cup boiled sweet corn
Salt to taste
1 tablespoon red chili powder
1/2 teaspoon chili flacks
1/2 teaspoon mix herbs
1/2 teaspoon oregano
2 tablespoon tomato ketchup
2 to 3 tablespoon mayonnaise
6 to 8 slice bread
Butter as needed
1/2 cup process cheese
1/2 cup pizza cheese
Chopped tri-color bell pepper
Method to make Veggie Lasagna:
- Soak kidney beans and soya beans in hot water for 5 to 6 hours. Pressure cook for 3 whistles or until cook properly. Add salt while cooking.
- In a pan heat oil and add ajwain to it. Add the onion-garlic paste to it. Cook for 2 minutes and then add tomato puree to it.
- Again cook. Now add baked beans with sauce, kidney beans and soya beans to it. Cook for 2 minutes. And now it’s time to add paneer, sweet corn, and all dry spices. Mix well and cook for 2 minutes, at last, add tomato ketchup and mix well.
- Let it come to room temperature and then add mayonnaise.
How to assemble Veggie Lasagna:
- Trim the sides of bread and roll them carefully. Apply butter on base and sides of the baking dish. Also apply slight butter on both sides of slices of bread.
- Place bread slices on the base of the baking dish. Now spread above mixture over it and then make a bed of process cheese and pizza cheese over it.
- repeat the same layer again, bread, mixture, and cheese.
- Finely sprinkle some chili flacks, oregano, and tri-color bell pepper over it.
- Bake 250`c temperature in preheated oven for 1- to 12 minutes or until cheese melts. Make sure to switch on the upper grill only.
- Remove from oven and directly serve piping hot Bread Lasagna.
