Vishal Wadhwa, Director of Shilton Hospitality

An interview with Mr. Vishal Wadhwa, Director of Shilton Hospitality

Vishal Wadhwa, Director of Shilton Hospitality, illustrates how the enterprise feels less like commercial ventures and more like community retreats.

Since the company’s inception in 2014, Wadhwa has been instrumental in steering its growth and diversification. He further shares the inspiration behind creating spaces where regulars are remembered and they relish the experience. Shilton’s journey has been rooted in client centric service.

In this conversation with SugerMint , Wadhwa shares the story behind the brand, the thinking that fuels its growth, and how staying true to core values has paved the way for meaningful innovation.

He offers ideas into building a brand that thrives on comfort, consistency, and character. Vishal’s journey is one of passion, purpose, and a deep insight of what makes people feel at home.

SugerMint: What inspired you to enter the hospitality industry, and how did you come to establish Watson’s pubs?

Vishal Wadhwa: I’ve always been drawn to the idea of creating spaces where people feel a sense of belonging—places that are warm, genuine, and full of life. Hospitality, to me, is a powerful way to connect with people.

Watson’s was born out of a simple idea: to build a neighborhood pub that feels like a second home. Not flashy or pretentious, but rooted in good energy, honest food, familiar faces, and great conversations.

That vision came alive with our first Watson’s in Bangalore, and from there, it found its way into the hearts of patrons across cities.

SugerMint: Can you share the vision behind the Watson’s brand and what sets it apart from other pubs in Bangalore and Chennai?

Vishal Wadhwa: Watson’s is built on authenticity. We’re not trying to be the loudest or the trendiest—we focus on creating a space where people can relax, connect, and truly be themselves.

Whether it’s a group of colleagues unwinding after work, old friends catching up, or someone enjoying a quiet pint solo, Watson’s offers a comforting familiarity. The vibe, the music, the service—all are designed to reflect a neighborhood spirit, something warm and timeless. That’s what sets us apart.

SugerMint: How do you curate the menu and drink offerings at Watson’s to cater to your diverse clientele?

Vishal Wadhwa: We pay close attention to our guests and how their tastes evolve. Our menu is a blend of comfort classics, local favorites, and a few bold experiments.

Whether it’s Natti-style South Indian bar snacks, hearty North Indian meals, or global comfort foods—there’s something for everyone. On the drinks front, we mix nostalgic staples with seasonal specials and locally-loved brews. It’s not about being overly complex—it’s about being honest, tasty, and consistent.

SugerMint: How do you keep up with the latest trends in the food and beverage industry to ensure Watson’s remains relevant?

Vishal Wadhwa: We’re constantly listening—through our teams on the ground, customer feedback, and even social media. While we stay grounded in our core identity, we do evolve—whether it’s adding low-ABV options, introducing plant-based dishes, or rethinking plating for more visual appeal.

Trends are important, but relevance comes from staying in tune with our audience and not losing sight of who we are.

SugerMint: What strategies do you employ to create a welcoming and vibrant atmosphere in your pubs?

Vishal Wadhwa: It starts with the team. Our staff are the soul of Watson’s—they know the regulars, they remember your drink, they greet you like an old friend.

We keep the music familiar and fun, the lighting warm, and the décor rooted in nostalgia with a twist of quirk. It’s about balance—keeping the energy up without being overwhelming, and ensuring the space feels approachable for everyone, from college students to seasoned professionals.

SugerMint: What advice would you give to aspiring restaurateurs looking to make their mark in the industry?

Vishal Wadhwa: Know why you want to be in this business—because the “why” will carry you through the challenges.

Be patient, be consistent, and always stay humble. Don’t chase trends blindly—build something real, something with character. Most importantly, take care of your people, both staff and guests. This is a people-first industry, and if you lead with heart, it shows in every plate and every interaction.

Watson’s continues to be a true neighborhood favorite—not just for its drinks and food, but for the experience it promises every time you walk in. Under Vishal Wadhwa’s leadership, the brand remains rooted in community, comfort, and character.
